Best Crock-Pot Pork Taco Recipe



Who says pork have to be dry and boring? This pork is moist and has TONS of flavor! It's got spice from the peppers, some tang from the lime juice, and just a hint of sweetness from the cane sugar and carrots. We're in love with this crock pot pork taco recipe.


  • Yields 8 Servings

  • Prep Time: 15 mins

  • Total Time: 5 Hours


  • 2 lb. pork loin

  • 1/2 yellow onion, sliced

  • 1/2 red or green pepper, sliced

  • 1 clove of garlic, diced

  • 1 Carrot, sliced

  • 1/3 zucchini, sliced

  • 1 lime (juiced)

  • 4 Chipotle peppers in adobo sauce, chopped, plus 3 tbsp. chipotle peppers in adobo sauce

  • 2 tsp. kosher salt

  • 1 tbsp. raw cane sugar (or brown sugar)

  • 1 tsp. garlic powder

  • 1 tsp. chili powder

  • 1/2 tsp. cumin

  • 1 can of a darker beer (Mexican beer such as Modelo works great)

Toppings For Serving




  1. Place onions, carrots, and red peppers at the bottom of slow cooker, then place pork on top. Add the zucchini on top of the pork. In a medium bowl or measuring cup, whisk together lime juice, chipotle peppers, salt, sugar, garlic powder, chili powder, cumin, and diced garlic. Pour lime juice mixture and beer over the pork. Cover and cook on low for 4 hours or high for 2 hours.

  2. When pork is tender, remove from slow cooker and shred, then return to slow cooker with 3 tbsp. chipotle peppers in adobo sauce and mix with the cooking liquid. Remove the pork and serve or let the pork simmer for another hour to maximize the flavor.
